If heaven has soup Apple Walnut Soup is on the menu! It is so light and cleansing as well as being a simple recipe with good nutrition! Every spoonful contains vitamins A, Bs, C, E, K, folate, fiber, antioxidants, omega 3 fatty acids, minerals such as chromium, phosphorus, potassium, calcium, manganese and trace minerals.  100% vegan, rawsome, gluten and dairy free deliciousness!

Apple Walnut Soup

Attributes:  vegan, raw, dairy free, gluten free, light and regenerating 
Equipment:  blender
Ingredients

6 peeled/cored red apples
2 T cilantro
2 T raw cashews
1 T raw walnuts
2 green onion
1 celery stalk
1/2 tsp juice of lemon
pinch cinnamon
1/4 C water
                                         

Directions:  Soak cashews & walnuts in water for 20 minutes -1 hour, rinse and pat dry. Chop apple, onion, add all ingredients to blender blend to desired thickness. Delightful and refreshing hot weather soup. Serve warm or chilled.”
                                 

Optional:  Adding 1/2 tsp minced garlic for a stronger flavor. Cilantro and sesame seeds are good to garnish this bright green soup. “
