Apple Walnut Soup
Attributes: vegan, raw, dairy free, gluten free, light and regenerating
6 peeled/cored red apples
2 T cilantro
2 T raw cashews
1 T raw walnuts
2 green onion
1 celery stalk
1/2 tsp juice of lemon
1/4 C water
Directions: Soak cashews & walnuts in water for 20 minutes -1 hour, rinse and pat dry. Chop apple, onion, add all ingredients to blender blend to desired thickness. Delightful and refreshing hot weather soup. Serve warm or chilled.”
Optional: Adding 1/2 tsp minced garlic for a stronger flavor. Cilantro and sesame seeds are good to garnish this bright green soup. “
