Fresh exotic fruit sliced and displayed colorfully with chia cereal and berries with hot hibiscus flower tea lightly teased with honey waits for you on a trolley beside your bed as morning sunlight streams in and you slowly awaken. Sound nice. It is! How thoughtful to bring Breakfast in Bed to someone you care about. I’ve served passion fruit (granadilla), dragon fruit, papaya, golden kiwi and a few berries; however, you could include any fresh fruits of preference. You could even bring your tray back to bed for you on your morning off. Why wait for someone else; show them how you like to be treated by example! This combination has the following nutritional benefits: Omega-3 and 6 fatty acids, dietary fibre (helps rid the body of cholesterol), anti-oxidants, vitamins A, Bs, C and minerals potassium (blood pressure, heart rate regulation), iron, calcium, copper, magnesium, phosphorus. For those you like or might like dragon fruit it contains anti-oxidant phytoalbumins that inhibit cancer cell growth, it contains lycopene famous for supporting a healthy prostate in men, and dragon fruit hailing from the cactus family are said to help release heavy metals from the body. A variety of plant-based foods is the spice of a nutrient rich life so lay in bed and enjoy Breakfast In Bed this morning.

Breakfast In Bed

Attributes:  vegan, gluten free and dairy free, healthy variety
Equipment:  Kettle

Ingredients:

 

1 C chia seeds
½ C organic unsulphured dried apple, chopped
¼ C raw buckwheat seeds
2 T hemp hearts
2 T slivered almonds
Pinch cinnamon spice
small sprinkle of sea salt
¼ C raisons
boiled water
3 T vegan milk
½ – 1 C rooibos tea
selection of fresh fruit
Directions:  Pour chia seeds into a bowl with apple, buckwheat, hemp hearts, almonds, cinnamon, salt and raisons. Stir to blend. Boil kettle and pour boiled water into chia mixture until a desired consistency is reached. Add 3 T vegan milk to cool. Pour boiled water into a tea cup with rooibos tea and steep 3 minutes. Cut fresh fruit of personal choice and display on a dish. Set hot chia cereal, cool fruit and hot steeped tea on to a serving platter and deliver to someone you care about…as breakfast in bed!
Optional:  Here is a list of fruit chosen for this image, right to left: 1 passion fruit, peel ½ cut away to easily spoon out, dragon fruit sliced, papaya sliced, golden kiwi fruit peeled & sliced and two large blackberries. On the Chia cereal are sliced raspberries and a star of anise (garnish). Sweeten with raw honey is desired.

Tips:  Chia cereal can be made cold but would require more time to open and gel up to thicken. Lots of omega-3 fatty acids, fibre, antioxidants, vitamins and minerals for good health! Remember to serve. Enjoy!
