Cantaloupe Greens Vegetarian Recipes

Sitting like award winning beauty, Cantaloupe Greens Salad is loaded with numerous antioxidants, chlorophyll, essential oils, minerals potassium, calcium, phosphorus, iron, magnesium, manganese, vitamins A, C and fibre. Thai chilies have analgesic properties, stimulate circulation, digestion and are anti-bacterial. The sprouts contain amino acids, enzymes and cancer busting agents. Cantaloupe Greens is fleshy, citrusy, and crunchy! A super vegan, rawsome, gluten and dairy free recipe!

Cantaloupe Green

Attributes:  vegan, raw, dairy free, gluten free, pretty and refeshing
Equipment:  melon baller, small food processor

Ingredients:

35-40 cantaloupe balls
1/2 C chopped red bell pepper
2 green onion chopped
1/2 C broccoli sprouts
1/2-3/4 C cress sprouts
2-3 raw lacinto kale leaves
1 1/2 oranges juiced
3 T fresh lemon juiced
6 medium mint leaves
2 large fresh basil leaves
1 1/2 T maple syrup
1/2 red Thai chili
                                         

Directions:  Cut clean cantaloupe in half, remove seeds and use a melon baller to make balls. Add balls to mixing bowl. Chop bell pepper, onion, separate sprouts with fingers and add all to bowl. Remove spines of lacinto kale and cut ribbons crosswise, add to bowl. Mix with two large spoons to mix thoroughly. Set aside. Cut red chili in half and remove seeds. Add all 6 dressing ingredients to small food processor and blend. Pour onto salad, stir and serve.”
                                 

Optional:  If lacinto kale is unavailable try another non-bitter green. Do not use green kale, as it is too bitter for this recipe. Try spinach, arugula or Swiss chard. “
