Coconut Mango Salad

Attributes:  vegan, raw, dairy free, gluten free
Equipment:  clever, peeler, food processor
Ingredients:                                                                                                                            

3 Thai coconuts
3 ripe Ataulfo mangos
1/2 red bell pepper
4 chives, chopped
1/4 C fresh cilantro chopped
1 T extra virgin olive oil
1 T juice of lime
1 clove garlic, chopped
5-6 medium basil leaves
1/4 C coconut water
1 tsp coconut syrup
1/2-3/4 red Thai chili, seeded
pinch sea salt, pepper
1/4 C raw cashews
                                         

Directions:  Soak raw cashews for minimum 1 hour or overnight, rinse well & drain. Use clever to open and drain water from young coconuts. Set water aside cut open and scoop out coconut meat; clean off brown fibre and julienne the meat. Peel & pit mangos, cut into long pieces, use carrot peeler to gain thin slices of red pepper, chop chives & cilantro; gently mix all salad ingredients together in a large glass bowl. Set aside. In a small food processor add dressing ingredients, blend until smooth. Pour over salad and gently mix with two large spoons. Serve as an appetizer or salad. Refreshing and satiating!”
                                 

Optional:  To plate set salad on a torn leaf of romaine lettuce; garnish with black sesame seeds.”
