Creamy Carrot Soup


Attributes:  raw, vegan, light and smooth

Equipment: juicer, blender
Ingredients

3 C carrots juiced
1 avocado, skinned/pitted
1 1/2 tsp minced garlic
2 T lemon juice
pinch each sea salt, pepper, ground coriander & paprika
                                     

Directions:  Juice carrots & pour into blender. Add rest of ingredients to blender and blend until smooth. Garnish bowls of Carrot Soup with drizzle of olive oil and sesame seeds or toasted pumpkin seeds.”
                             

Optional:  a pinch of cayenne powder or chopped 1/2 tsp fresh savory leaves adds new depths of flavor
