Creamy Kale & Squash Salad

Creamy Kale & Squash Salad is an “all dressed” recipe containing numerous antioxidants, vitamins A, Bs, C, E & K, minerals calcium, copper, potassium, phosphorus, iron, magnesium, manganese and 82 trace minerals, fibre and amino acid Tryptophan (improves sleep). 2 T of nutritional yeast in this recipe contains 8 g protein. A paradoxical salad in that its both warm and cool, crunchy and oh so creamy! Vegan, gluten and dairy free goodness.

Creamy Kale & Squash

Attributes:  vegan, dairy free, gluten free, creamy and satisfying
Equipment:  food processor
Ingredients:

1/2 C cubed butternut squash
1 bunch raw green kale
2/3 C raw cashews
1 Hass avocado, skinned/pitted
1 yellow bell pepper, stemmed/seeded
1 1/2 T garlic minced
2 T nutritional yeast
2 green onions
pinch sea salt & thyme
                                         

Directions:  Soak raw cashews 3 hours or overnight, rinse well before using. Boil or steam butternut squash until soft but firm, drain water and set aside to cool. Tear raw kale leaves into bite size pieces off spines and place leaves in a large mixing bowl. Add squash; let sit. In a food processor blend remaining ingredients until smooth. Transfer dressing to mixing bowl with kale & squash and stir to coat. Garnish with dulse flakes; ready to serve.”
                                 

Optional:  If preferred kale can be steamed, cooled slightly then added to mixing bowl. Raw sunflower and pumpkin seeds toasted are a nice addition.”
