French Onion Soup from vegetarian recipes

This French Onion soup is anti-inflammatory, low calorie, loaded with antioxidants, vitamins A, Bs, C, E & K, contains natural essential oils, helps prevent free radical damage, is anti-diabetic, anti-bacterial, has EFAs, minerals chromium, manganese, potassium, copper, iron, magnesium, selenium & zinc. Bragg’s Liquid Aminos contain 16 amino acids (protein building blocks). Onions and garlic improve blood vessel pliability helping to prevent & reduce high blood pressure. This is an easy French onion soup! We have included a healthy vegan cheddar recipe that tastes super cheesy! A vegan, rawsome, gluten and dairy free recipe. Yum.

Cheesy Onion Soup

Attributes:  vegan, raw, dairy free, gluten free  
Equipment:  dehydrator, blender, food processor
Ingredients:

2 C raw cashews
1/4 C + 2 T nutritional yeast
1 tsp turmeric
1 tsp sea salt
2 T flax seeds
1 lemon juiced                                                                                                          1 tsp red curry paste
water to make 1 C
4 C hot water
1/2 C red onion chopped
1 green onion chopped
8 fresh chives
2 T Bragg’s Liquid Aminos
1 1/2 tsp minced garlic
1 tsp maple syrup
1/2 tsp thyme & sea salt
2 T soaked/rinsed raw walnuts
small pinch black pepper
1 large basil leaf
                                         

Directions:  To make Cheese: food process raw cashews to a crumble by pulsing; transfer to a mixing bowl. Add juice of one lemon; curry paste and water to measure 1 C and stir. Pour liquids into cashew crumble mix into a lumpy paste. Spread on silicon sheets on dehydrator trays. Dehydrate @ 118 degrees F for 5 hours. Turn over after 2 hours removing silicon sheet by peeling it away from drying cheddar slices. Turn over again at 4-hour point. Remove and serve after 5 hours. To make Soup:  Add remaining ingredients to a blender, blend smooth. Pour into bowls garnish with chives and green onion. Serve warm with cheddar slices. Serves 6. A bold and rejuvenating soup!
                               

Optional:  If you do not have a dehydrator turn oven on to 200 degrees F and keep door slightly ajar. Spread cheddar paste onto a pizza pan and dehydrate for same time. Avoid parchment paper as it sticks and tears cheddar when peeling.”
