Green Curry Soup Vegetarian Recipes

Green Curry Soup
Attributes: vegan, raw, dairy free, gluten free and spicy
Equipment: clever, blender
Ingredients:
2 young Thai coconuts
1 C spinach leaves
1 T red bell pepper, seeded/stemmed
2 green onions
1 lime juiced
1 tsp fresh minced garlic
1 T maple syrup
2 fresh mint leaves
1 tsp minced ginger root
1/4 tsp sea salt
1/8 tsp each turmeric, coriander & cumin powder pinch each cayenne pepper, cinnamon
Directions: Cut open tops of two coconuts pour out enough water to measure 1 1/2 C, pour into blender. Scoop out meat of one coconut if thick or meat of two coconuts if thin; remove brown fibre then put into to blender. Add remaining ingredients to blender and blend until smooth. Pour into bowls, garnish and serve.
Optional: Garnish with paprika, chives and thin slices of red bell pepper. To reduce heat of this soup, squeeze a little more lime. “
