Lotus Seaweed Soup Vegetarian Recipes

Fill up with our nourishing and earthy bowl of hot goodness! Lotus Seaweed Soup is steaming with antioxidants, fibre, EFAs, minerals magnesium, manganese, calcium, chromium, copper, iron, selenium & zinc, vitamins Bs, C, E & K. Some ingredients are anti-tumoral, anti-diabetic, support blood vessel wellness, reduce LDL cholesterol; help to reduce incidences of stroke or arterial disease. Alaria seaweed has a mild flavor; lotus root is crunchy and neutral. Delicious!  Vegan, dairy free, gluten free, low fat and satiating.

Lotus Seaweed Soup

Attributes:  vegan, dairy free and gluten free, earthy and mild
Equipment: peeler, large deep pan or wok

Ingredients:

1/2 red chopped onion
1 T fresh chopped garlic
1 tsp minced ginger root
2 T olive or coconut oil
pinch sea salt
3/4 – 1 lotus root, peeled/sliced
1 C Enoki mushrooms
1 large carrot grated
6 C boiled water
2 vegetable bouillon cubes
1 T balsamic vinegar
1 1/2 tsp honey
1 T Bragg’s Liquid Aminos or Gluten free Tamari
1 tsp sea salt
1/2 tsp dried thyme
1 C Alaria seaweed

Directions:  Soak seaweed 24 hours, pat dry & cut to bite size pieces, set aside. In a large deep cooking pan sauté the first 5 ingredients. Add the next 3 ingredients and cook stirring frequently for 7-10 minutes. Add the rest of the ingredients except soaked seaweed this is to be added near the end. If seaweed has not been soaked add with remaining ingredients. Cook over medium heat for 10 minutes. Add seaweed and simmer for 7 minutes. Serve hot. This soup is earthy and nourishing.

Optional:  If you wish to skip soaking the seaweed add half package dry Alaria seaweed, cut into 2-inch lengths and add to ingredients midway through cooking. Seaweed will expand and soften. 1 package of small bundle yam noodles (low glycemic) is a nice addition to this soup; add noodles midway during cooking.
