My Thai Smoothie
Green mango salad is one of my favourite Thai dishes and the inspiration for this smoothie recipe. With only six ingredients a creamy concoction was created! Oh my! I would drink the whole mason jar of smoothie on my own if it wasn’t so satiating! It is sweet with a kick of spicy! Just right. My Thai smoothie offers a little boost of energy and lots of nutrition! This drink has vitamins A, B C, E, K, fibre, essential fatty acids and folate. Supports digestion, circulation, healthy cholesterol; contains anti-inflammatory properties and is rich in magnesium and copper. My Thai smoothie is a party pleaser, a good on-the-go recipe or a satisfying liquid meal while juice feasting. Yum!
Attributes: Raw, Vegan, Dairy free, energizing
Equipment: juicer, blender
2 limes, skinned
2 Ataulfo mangoes, skinned & pitted
4 apples, 2 granny smith, 2 red
1 C raw cashews (soaked 2 hours, or overnight)
5 fresh medium mint leaves
1/3 – 1/2 fresh red Thai chile, seeded
Directions: Juice apples and limes, pour into a blender and blend with remaining ingredients. Pour into glasses, garnish and serve. It’s a smoothie that tastes like Thai Green Mango Salad. Satisfying.
Optional: Add ice to blender and serve cold. Can refrigerate in a sealed glass jar for up to 24 hrs.”
