Orange Fennel Salad Vegetarian Recipes

Orange Fennel Salad is a multi-textured dish of pretty colors and goodness. It’s loaded with numerous antioxidants, vitamins Bs, C & K, minerals calcium, copper, iron, magnesium, manganese, potassium, selenium & zinc, as well as fibre and EFAs. This salad contains essential oils; it is anti-fungal, anti-bacterial, anti-inflammatory, and supports healthy arteries. A light, sweet and crunchy tasting recipe that is vegan, raw, gluten and dairy free! Great for picnics.

Orange Fennel Salad

Attributes:  vegan, raw, dairy free, gluten free, crunchy, creamy and sweet
Equipment:  food processor
Ingredients

1 small red onion
1-2 navel oranges
1 bulb fennel with fronds
1-2 small ripe avocados
10 spinach leaves
2 limes juiced
4 T extra virgin olive oil
2 T coconut syrup
1/2 tsp fresh minced garlic
                                         

Directions:  Prepare salad ingredients except avocado and add to large glass-mixing bowl. In a small food processor add lime juice, olive oil, syrup, garlic and blend. Pour dressing on salad and mix. Lastly prepare avocado, cut into cubes, add to bowl and turn to coat with dressing. Transfer to a serving bowl. Serves 4 generous portions, or 6 small.
                                 

Optional:  If there is no time to peel or cut the orange skins off each orange section, try a can of mandarins. Drain off juice before adding. Less vitamin C but still tastes good.”
