No need to bake it! No flour! Rawsome gluten free Apple Pie is the simple goodness of fresh organic apples, spices, raw nuts and an easy caramel sauce! High in fiber, antioxidants, omega 3 fatty acids, vitamins Bs, C, E and some K, minerals potassium, iron, magnesium, manganese, copper, selenium and zinc. This living food apple pie helps slow the rate of sugar uptake into the blood giving a slower sustainable energy. This recipe is anti-fungal, anti-depressant and digestive. The raw nuts help to balance cholesterol in the blood, and the fresh squeezed lemon juice helps to break down kidney stones. Probably one of the healthiest apple pies you can eat! Of course there is plenty to share! Yum!

Rawsome Apple Pie

Attributes:  raw, vegan, dairy free and gluten free, better than grandma’s
Equipment:  food processor, mandolin
Ingredients:

1 C raw Macadamia nuts
1 C raw almonds
½ C raw walnuts
8 + 3 Madjool dates
1 T raw honey, melted
Pinch + pinch of Himalayan salt
7 + 5 red apple, ex. Fuji, gala
Pinch + pinch cinnamon spice
Pinch nutmeg powder
⅔ C + 1 tsp juice of lemons
½ C coconut oil
⅓ C raw agave nectar or maple syrup
1 tsp Vanilla extract
 ⅓ C raw almond butte]
                                         

Directions:  Use a 9 inch spring pan; coat with coconut oil, dust with GF flour to keep crust from sticking when serving. Wash apples, peel & core 5 apples, place in a blender with 8 pitted, chopped dates, 1 pinch of cinnamon, and nutmeg. Blend until smooth. This is the filling between apple slice layers. Empty into a bowl, set aside. Cut the other 8 apples in half, leaving the skin on. Use a mandolin slicer to slice the apples, avoid the seeds and core. Place slices in a sealable container with ⅔ C fresh lemon juice, 2T syrup, 1 pinch of cinnamon. Turn to coat all apples, and let sit 2-3 minutes. Remove apple slices to pile on a cutting board, keeping the best slices for the decorative top layer. To make crust:  Pulse the macadamia, almonds, and walnuts into a chunky crumble. Chop the dates; add with pinch of salt and melted honey to the Food Processor and blend. Remove and press into spring pan. No need to press up on the sides. Set aside. To make the caramel drizzle:  blend in a small food processor, ½ C coconut oil, ⅓ C raw agave syrup, 1 tsp vanilla, almond butter and pinch of salt. Blend for 2-3 minutes. Ready to layer: spread apple filling onto crust, spread some of the caramel drizzle, and add 2-3 layers of apple slices. Use broken pieces here. Make sure to touch as much of the sides of the spring pan with all layers especially with the filling and slices. Repeat layers. On the top layer of apple slices spread enough of the apple filling to cover yet to still see the apple pattern. Any left over Caramel Drizzle can be applied on top. Ready to share. Serves 8 large slices, or 16 smaller slices. Rich and unforgettable!”
                                 

Optional:  Try making smaller pies perhaps try three mini pies. Very cute!
                                               

Tips:  Soaking the apple slices in lemon juice help to preserve the apples, while the cinnamon helps to slow the rate of sugar absorption
