Rawsome Carrot Pudding is Akasha’s secret pumpkin colored pudding containing cinnamon and cardamom, two powerful spices! Cinnamon has the highest antioxidant strength over any food and helps balance blood sugar levels. The essential oils of the cardamom spice are a digestive aid, anti-spasmodic, expectorating and stimulating. Made with six simple ingredients Rawsome Carrot Pudding provides some impressive nutrients; vitamins A, Bs, C, K, folate, Omega 3 & 6 fatty acids, anti-oxidants, fibre and minerals manganese, potassium, calcium, copper, phosphorus, zinc and iron. This carrot pudding is an eye pleasing tasty treat between meals or served as dessert!

Carrot Pudding

Attributes:  raw, vegan, dairy free and gluten free, reminiscent of Christmas
Equipment:  blender, juicer
Ingredients:

1 lbs. carrots
1½ C almond milk
1 C white chia seeds
1 tsp vanilla extract
Pinch of cardamom
Pinch of cinnamon
3 T agave nectar or maple syrup
                                              

Directions:  Juice carrots to make 2 C of carrot juice. Mix all ingredients thoroughly in a large bowl. Make certain all chia is wet. Place in fridge overnight or for 6 hours. For best results stir 1-2 times more during the set time. When ready to eat blend in a blender until smooth. Pour into bowls and garnish.
                                      

Optional:  Drizzle some unsweetened desiccated coconut flakes and coarse ground raw almonds for added texture and taste.
                                               

Tips:  This recipe is a good source of antioxidants, Vitamin A (beta-carotene), B complex, Vitamin C, fibre, copper, calcium, potassium and phosphorus. This is a delicious recipe that can also be eaten at breakfast.
