Spiralled Beet Salad Vegetarian Recipes

Zesty Spiralled Beet Salad contains essential fatty acids, protein, vitamins A, Bs, C, minerals calcium, copper, iron, magnesium, manganese, potassium, phosphorus, selenium & zinc.  Beets contain a healing agent called glycine betaine, which reduces toxic blood metabolites, supporting a reduction in atherosclerotic plaque settling in arteries. Spiralled Beets

Attributes:  vegan, raw, dairy free, gluten free and refreshing
Equipment:  spiral slicer, food processor
Ingredients:

2 large organic beets
1/4 C juice of lime
1/4 C extra virgin olive oil
2 cloves garlic chopped
1 tsp maple syrup
1/2-1 green apple chopped
2 T raw pine nuts
handful cilantro
pinch each sea salt & thyme
                                         

Directions:  Cut ends of beets, peel and spiral slice to make long strings. Place beet spirals in a large bowl, lift and cut long strands shorter with a pair of scissors, set aside.  In a small food processor blend the remaining ingredients, except the chopped apple. Pour the sauce onto the beets and mix with tongs until the beet spirals are evenly covered.  Add the apple chunks and mix them into the salad. Transfer to a serving bowl and garnish with black sesame seeds and more cilantro leaves. Tongs are recommended for serving.                                  

Optional:  Chopped apple can be added to the top of the salad to avoid being colored bright pink until eating.”
