Summer Salad

Summer Salad is an oh-so-juicy fresh salad, gleaming with a rich source of anti-oxidants, EFAs and fiber. This recipe has vitamins A, B-complex, vitamin C, carotenoids and vitamin K for bone building and proper blood clotting; as well, minerals iron, potassium, zinc, copper, manganese and magnesium.  Zucchini is a fruit and is a very low calorie food rich in fiber providing satiety and protecting colon wellness. A vegan, raw, low fat, gluten & dairy free recipe that is sweet and satisfying. Yum!

Summer Salad

Attributes:  vegan, raw, gluten free, dairy free, light and sweet
Equipment: spiral slicer, small food processor
Ingredients:

3 C spiral sliced zucchini (about 1 large zucchini)”,
1/2 C fresh spinach leaves
1 C Asian pear, peeled/cubed
1 1/2 C fresh organic strawberries, quartered
2 T chives, chopped
2 T each raw pumpkin, raw sunflower seeds
Bragg’s liquid Aminos or gluten free Tamari
1/4 C anise stalk, chopped
1 1/2 long chunk cucumber, chopped
1 mandarin, peeled/seeded
4 mint leaves
2 tsp fresh minced garlic

Directions:  Place raw seeds in a bowl coat with Bragg’s Liquid Aminos transfer to a oven safe tray and toast in toaster oven until dry and golden, remove & set aside to cool. Cut ends off zucchini and spiral slice it into long noodles. Cut excessively long noodles in half, place in center of large salad bowl. Cut spinach leaves in half and mix into zucchini noodles. Cut pear, strawberries and chives. Take the strawberry quarters and follow the outer edge of the noodles to make a complete circle. Do the same with the pear cubes. Sprinkle the chives on top. Sprinkle some toasted seeds to garnish. Set aside. In a food processor blend remaining 5 dressing ingredients in a food processor until smooth. Dressing can be displayed in the middle of salad if put in a small bowl. Dressing can be garnished with toasted seeds. Raw black sesame seeds are nice as well. Pour and toss dressing into salad to serve
                                 

Optional: This dressing is fat free, non-GMO and contains no additives or preservatives. You can use any of your favorite dressings on this salad.”
