Super Greens Salad

Super Green Salad

Attributes:  raw, vegan, dairy free, gluten free 
Equipment:  small food processor
Ingredients:

1/2 C raw spinach
1 C Tuscan (green) kale
10 raw organic green beans
1 green pepper, stemmed/seeded
1/4 C chopped green onion
1/2 C cucumber matchsticks
1/2 C raw zucchini matchsticks
1 T extra virgin olive oil
1 tsp Bragg’s apple cider vinegar
pinch sea salt & pepper
2 ripe Hass avocados peeled/pitted
1/4 C fresh dill weed
1 fresh clove garlic
1/4 – 1/2 tsp sea salt
2 1/2 T juice of lemon
1/4 C + 1 T water
1 T olive oil
                                         

Directions: Cut spinach in half, remove kale ribs, and cut leaves to bite size. Chop raw green beans on 45-degree angle. Julienne green pepper, chop green onion and cut cucumber and zucchini into matchsticks about 1 inch long. Toss in a large mixing bowl and set aside. In a small food processor blend olive oil, balsamic vinegar, sea salt & pepper. Pour onto salad, toss and let it sit to soften the kale, about 5-10 minutes. In a small food processor blend the final dressing ingredients until smooth. Garnish with sprinkles of paprika, springs of fresh dill weed and sesame seeds.”
                                 

Optional:  Salad can be served with a dollop of dilled avocado dressing on top, on the side or the dressing can be tossed into salad.”
