Sweet On Quinoa For Breakfast



Quinoa contains all the Essential amino acids (building blocks for proteins and body enzymes)  the body must ingest from the diet. How wonderful it is to find vegetarian source of these nutrients!
Hot In the Kitchen has enhanced this nutty seed that cooks up fluffy and aromatic with sweetness and more naturally occurring fibre. Delicious when warm; keeps well for travel and is pleasant cold.


Sweet on Quinoa
Attributes:  vegan, gluten free, dairy free and nut free, super energizing

Equipment:  Food processor


2 ½ C cooked quinoa
3 dates, pitted
4 T water
½ C organic Thompson raisons
4 T 1 tsp raw honey
½ tsp coconut oil
1 tsp zest of organic orange
1 T pumpkin seeds
1 T dried cranberries, chopped
2 T unsweetened desiccated coconut

Directions:  Rinse quinoa several times before cooking to rid it of any bitter residue. Use 1 ½ C quinoa in 2 ½ C water with ½ tsp coconut oil and pinch of Himalayan salt. Bring to a boil, stir, cover and reduce to simmer until quinoa seeds are soft and water has evaporated. Transfer to a glass mixing bowl to cool. In a small food processor process together dates, water, raisons, honey and blend/stir/blend until mostly smooth. Scoop out onto quinoa and mix together. Add remaining ingredients and stir well. Serve warm or cool.

Optional:  A vegan milk may be added to this cereal. For more sweetness add an extra 3 dates and 2 T water when blending ingredients in food processor

Tips:  Quinoa contains all 9 essential amino acids, it is a good source of dietary fibre, B-complex, minerals such as iron, calcium and manganese.
