Sweet Potato Muffins

Sweet Potato Muffins are a body builder’s dream! Akasha has created a healthy high protein muffin that is celiac friendly, being free of gluten. In fact, there is no flour in this recipe and no dairy. These Sweet Potato Muffins are flavorful and easy to make. Everyone can enjoy them. Perfect as a satisfying snack or as part of a nutritious breakfast. Take them to go!

Attributes: ovo vegetarian, high protein, no flour, no gluten & no dairy

Equipment: muffin pan (12 muffin), potato masher

Ingredients:

2 C mashes organic sweet potato
4 C uncooked organic oat flakes
2 C organic egg whites
2 whole eggs
2 T real vanilla extract
3/4 C coconut sugar or sucanat
1 tsp melted coconut oil + some to coat muffin pan
1 tsp Himalayan salt
1 ½ tsp pumpkin spice
1 tsp cinnamon spice
½ tsp cardamom powder

Step by Step: Preheat oven to 350 degrees F. Coat all 12 muffin pan cups with some coconut oil. Set jarred coconut oil in hot water to melt enough oil to measure 1 tsp. Peel, cube and boil sweet potato; mash and let cool. In a large mixing bowl measure and add all dry ingredients. In a 4 C measuring cup measure and add all wet ingredients; blend vigorously & thoroughly with a fork. Pour wet ingredients into dry ingredients, add sweet potato (2 C). Using a large metal spoon stir until combined to make a wet batter. Spoon muffin batter into coated muffin pan. Bake on middle rack for 30-35 minutes. Remove from oven and cool 15-20 minutes before serving. Cashew nut butter is tasty spread on a hot muffin sliced open.

Option: For those who are training for competition or for those looking to reduce sugar and salt, omit salt and reduce sugar by half. You can always add a sprinkle if you need to after baking.

Tip: These Sweet Potato Muffins are a good source of fibre, protein, iron, vitamin A, B12, D, E, choline (brain function) and folate, as well as minerals calcium, phosphorus, potassium, selenium (antioxidant) & magnesium. Celiac and waist friendly. Bon appetite. After cooling, refrigerate to store extra muffins in an airtight bag or container.
