The Green Fudgesicle
These dairy free fudgesicles are hiding a little green secret in their simple four-ingredient mix! But that’s not all; they contain electrolytes, minerals zinc, iron, calcium, manganese, chromium, vitamins A, Bs, C & K, omega fatty acids, fiber, and anti-oxidants. For those who love to enjoy a chocolaty cool treat free of additives this one does something quite the opposite of the usual sugary frozen pops, these homemade fudgesicles contain an amino acid called tryptophan and a natural substance called anandamide that relaxes you! You won’t need to peel the kids off the ceiling any more after they cool down with one of these fudgesicles! They are satisfying so best eaten far from mealtime. Enjoy!

4 small Hass avocados
3-4 fresh Thai coconuts
3/4 C agave or maple syrup
2 tsp organic vanilla extract
1/2 C organic raw cacao powder
Directions: Open the coconuts and drain the water into a bowl. Scoop out the coconut meat and put the fleshy part into a strong blender. Add 1 C of the coconut water in with the coconut meat and blend to make coconut milk. Slowly add more coconut water. Make it a thicker rather than thin consistency. Measure for 2 Cups of coconut milk. Add and blend all other ingredients with the coconut milk in the blender. Use the plunger with the lid on; blend until smooth. Pour into Popsicle moulds and freeze for 3 hours or until set.
Optional: If in a hurry, or can’t find fresh coconuts use 2 cups of canned coconut milk. Not as nutritious as fresh, but the kid in anyone will love this tasty treat! Also, this recipe doubles as a 5-minute chocolate pudding! It’s a secret that these fudge-sicles are really green!
Tips: After the Popsicle moulds have been filled; tap the mould on the counter to remove any air bubbles. This will help make solid fudge-sicles!
