Tomato Soup In The Raw is so creamy and flavorful that it will all be eaten in a flash! Tomato Soup

Attributes:  vegan, raw, dairy free, gluten free
Equipment:  blender
Ingredients:

7-8 medium tomatoes
2 C water
1/2 C pine nuts
1/4 C fresh basil leaves
1/4 C white onion chopped
1 tsp sea salt
1 clove garlic minced
2-3 sundried tomato rehydrated
                                         

Directions:  Soak sundried tomatoes in hot water for 20 minutes, rinse, pat dry and chop. Wash tomatoes, pat dry, quarter or chop to fit blender. Measure and place all ingredients in blender starting with water, blend. For a chunky texture reserve half tomatoes until soup has been blended once; add remaining tomatoes to blender and pulse 1-2 times to partially break down. Ready to serve.
                                 

Optional:  Keep ingredients at room temperature before making this recipe so hot water keeps a warmer soup. If the weather is hot a cool soup may just be the thing. Garnish with dulse flakes.”
